Soup Weather

Finally! Soup weather is upon us! The rain has begun and the heat has broken. We are bringing in November with cool weather. Hallelujah!

I don’t know about you, but I love soup, especially homemade. I’m not a fan of canned, but to each their own. When talking about my favorite recipe for tomato soup, my co-worker called it bougie. In other words, she was saying that it was fancy or complicated, which is true. I tend to go the extra step for good, homemade food, when time isn’t a factor.

Zuppa Toscana is one of my favorite simple soups. It’s pretty easy to throw together and it doesn’t take an exorbitant amount of time or ingredients. This recipe is great. I’ve used it several times. It calls for Italian sausage. You can use our beef Italian or mild. You can also use our pork sausage, mild or hot. I’ve made this with beef and pork. Both work great!
