The new fat in town

Greetings from Tink World! 

Well, it looks like there's a new, trendy fat in town (again). Move over coconut oil, lard is here! Yes, you read that right. Lard is finally making a comeback! 

Don't get me wrong, I love coconut oil. I use it in for almost everything. It's just time that the truth comes out about animals fats. Guess what!?! They aren't bad for you!

In the 1970's, a study was published that demonized saturated fats. The purpose of the Seven Countries Study was to try to determine what causes heart disease. They studied seven countries, including the U.S., for decades. The study found that heart attack and stroke risk was related to the level of total serum cholesterol. They believed that consuming fats, especially saturated fats, would cause cholesterol levels to rise and increase the risk of heart disease and stroke. 

Many say that the push away from animal fats was political. The government was subsidizing crops and wanted to push people towards oils derived from these crops instead of butter and lard. Thus, lining the pockets of those involved, including the scientists involved in the study.

Whatever the true cause of the skewed study's findings, the truth is coming to light. Butter, coconut oil, animal fats, etc. are the healthier options. To me it makes sense that these more naturally occuring oils are healthier. If it has to be made by a chemist, think margarine, it's probably not as safe as goold ol' butter made from cream. 

Here's a great article about why lard is good for you. It touches on the health benefits of lard and the fact that it's heat stable. It's a quick read and worth the few minutes it takes. 

The great news, is that beef and pork fat are super easy to render. It has a long shelf life just sitting on the counter. You can also store it in the refrigerator for an extended period of time.
