Mexican Sloppy Joes
What you'll need:
1 lb. Tink's ground beef
1 tablespoon bacon grease
1 onion, diced
1 red bell pepper, diced
1 jalapeno pepper, seeded and diced
2 cloves garlic, chopped or 1 Tbsp garlic powder
3 teaspoon cumin
1 cup beer
1 (15 ounce) can tomato sauce
2 chipotle chili peppers in adobo, chopped
1 teaspoon oregano
2 teaspoon smoked paprika
1/2 teaspoon cayenne
a couple shots of Worcestershire sauce
1/4 cup ketchup
salt and pepper to taste
Juice of 1 lime
1/2 bunch of cilantro, chopped
homemade guacamole (recipe below)
jalapenos, sliced to taste (optional)
Brown the beef in a large pan over medium heat. Salt and pepper to taste and set aside. Heat the grease in another pan. Cook onions and peppers until tender, about 4-6 minutes. Add the garlic and cumin and cook one minute. Add the beer to deglaze the pan. Add beef, tomato sauce, chipotle chili peppers, oregano, paprika, cayenne, Worcestershire sauce and ketchup. Simmer for 15-20 minutes.
Taste and add salt and pepper to taste. Mix in the lime juice and cilantro.
Serve in buns with guacamole, onions, sliced jalapenos, and cilantr0.
* Note: If you aren't a fan of spicy, omit the chipotle peppers or only use one. You can also skip the jalapenos.
2 ripe avocados
2 Tbsp finely diced onion
handful chopped cilantro
juice of two lemons or limes
salt, pepper and garlic powder to taste
optional jalapeno for spice
Slice or cut avocados and place in a bowl. Add all ingredients and mix. Use a pastry knife or potato masher to mash the avocado. Taste and add seasonings as necessary. Some people like to add tomato to their guacamole. I'll add it when it's in season, but it's not necessary.
