Butternut Squash

Greetings from Tink World!

I like to share wonderful recipes. This past week, I was craving something that tasted and smelled like fall. This recipe is exactly that! The best part is that the main ingredients can be found at your local farmers market! The squash, onions, apples and sausage can all be 20150930_191704.jpgfound at the Decatur Farmers Market.

Stuffed Butternut Squash

2 medium to large butternut squash

1 lb. Tink’s Sausage

2 green apples cut into small pieces

1 onion, diced

4 Tbsp butter

2 Tbsp brown sugar or honey

¼ tsp cinnamon

1/8 tsp nutmeg

1/8 tsp sage

½ tsp garlic powder

Granola

Salt

Pepper

Olive oil

Start by pre-heating oven to 375 degrees. Wash the squash before cooking. Cut squash in half and scoop out the seeds. Rub olive oil on the meat of the squash and season with salt and pepper. Turn squash face down on a baking sheet. Bake for 30-40 minutes until squash is tender. Allow to cool while you brown sausage.

Add 1 Tbsp butter to a frying pan/skillet. Cook sausage and break up while browning. Add onions after about 3 minutes. Once onions are soft, add the apples and a bit of salt and the garlic powder. Cook until the apples are crisp-tender.

Scoop the squash out of the shells. Leave a small amount of squash on the sides of the skin. Mix the squash with the sausage mixture. Scoop the mixture back into shells.

Mix the butter, brown sugar or honey, cinnamon, nutmeg and sage. Top the stuffed shells with the butter mixture. Then, add the granola. Bake in oven for 10-15 minutes until hot and bubbly. 

As for markets, we will be back at the Decatur Farmers Market on Saturday, October 10. The hours are still 9 a.m. to 1 p.m. To my knowledge, there are no festivals going on this weekend. So, parking shouldn't be a problem.
