Short Ribs

Greeting from Tink World!

Short ribs are an overlooked cut. It seems that it's not on purpose. In fact, many people just don't know what to do with short ribs. Honestly, the possibilities are endless. You can crock pot them, smoke them low and slow, bake, use in broth and the list goes on an on. The recipe below is one that Tink recently tested. It was delicious. She did make a few adjustments, especially since the orignial recipe was so vague.

Cherry Bacon Short Ribs

2 packs of Tink's Short Ribs, about 4 lbs.

3-4 garlic cloves, chopped

1 large onion

6 fried bacon slices, chopped

1 cup cherries, pitted 

2 cups Tink's Beef Broth

Juice of 1 lemon 

1 Tbsp lemon zest

4 sprigs of rosemary or 3 Tbsp dried

Salt and pepper to taste

2 Tbsp coconut oil

Preheat oven to 350 degrees. Salt and pepper the ribs liberally. Brown the ribs in coconut oil. Remove them from pan and set aside. In the same pan, add the onions and garlic. Cook until onions are soft. Add the remaining ingredients and allow to simmer for 3-5 minutes. Place the meat in a dutch oven and pour the sauce over the ribs. Place the dutch oven in the oven. Roast, lid on, for 2-2 1/2 hours. The sugars from the cherries can start to burn. So, keep an eye on it once you get close to the two hour mark. 

This can be served over rice, mashed potatoes or cauliflower mash. The cherries used were jarred without extra sugars or preservatives. You could also use fresh cherries, just be sure to remove the pits.

As for markets, Team Tink will be at the Evans Towne Market on Thursday, October 16 from 4-7 p.m. Then, on Saturday, we'll be at the Decatur Farmers Market from 9 a.m. to 1 p.m.
