Roasts

Greetings from Tink World! 

Roasts fly out of the freezer in the winter. This time of year, they tend to not sell as well. Roast beef doesn't sound so good when it's 95 degrees. However, they are for more that just making a Sunday pot roast. 

Roasts make great sandwich meat and tacos. They can be ground to make your own ground beef. Some roasts make great jerky and kabobs. You have to think outside of the crock pot when it comes to roast. 

I have shared this recipe before. It has been two years since it has been on a blog. So, I figured that it was time to share again, especially since the fixings for tacos are beginning to come in. 

Tink Tacos 

2.5-3.0 lbs. Tink’s Beef Shoulder Roast or 2-3 lbs. of Tink’s Stew Beef
3 poblano peppers, sliced thin
2 onions, sliced thin
1 red bell pepper, sliced thin
2 tsp. olive oil
2 cups beef broth
3 tsp. cumin
1 tsp. Worcestershire sauce
2 tsp. fresh thyme
2 garlic cloves, minced
Tortilla shells, whole wheat
Garlic Powder, salt and pepper to taste

Directions
Sauté peppers and onions in a pan with olive oil. Season roast with garlic powder, salt and pepper and brown all sides. Place in large dutch oven or crock pot, cover with onions and peppers. Mix beef broth with Worcestershire sauce, thyme, cumin and minced garlic. Pour over roast. Bring to a boil, lower heat and cover. 

Cook over low heat for 4-5 hours or until meat falls apart. Thicken broth with corn starch to make a light sauce to pour over meat. 

This is where you can get creative. For a true Tink Taco, serve on a whole wheat tortilla shells and add sour cream or greek yogurt, a layer of meat, peppers, onions, cheese, salsa verde, tomatoes and black olives. However, this is also great over rice or mashed potatoes.

There's also a great recipe for french dip sandwiches in the Food Forum. They are made with a sirloin tip roast. It's easy and a crowd pleaser!
